This is one of my family favorites! A lot of popular dishes are not Paleo or gluten-free friendly. But this Cobb-Like Green Bean Salad with Creamy Honey-Dijon Vinaigrette will have your family clamoring for more!

  • 250g (1/2 lb) leftover cooked chicken, cut into bite size pieces
  • 10 red cherry tomatoes, cut in half
  • 10 yellow cherry tomatoes, cut in half
  • 1 ripe avocado, diced
  • 4 hard-boiled eggs, roughly chopped
  • 650g green beans, cooked and cooled
  • 6 large green olives
  • 12 large kalamata olives

Honey-Dijon Vinaigrette:

  • 1 large clove garlic, chopped
  • 1 tbsp unpasteurized honey (SUB date paste OR unsweetened apple sauce if on a Whole30)
  • 1 tbsp Dijon mustard
  • 2 tbsp balsamic vinegar
  • ¼ cup extra virgin olive oil
  • 2 tbsp water
  • ¼ tsp salt
  • ¼ tsp black pepper
